Autumn Recipe: Bramble Gin Cake

This recipe is a lighter and boozier twist on traditional fruitcake, and is sure to go down well at any autumnal ritual or celebration. Not only is this cake easy to make, but it's also the perfect way to use up the leftover fruit from your homemade bramble vodka, brandy or gin.
If you haven't made any this year, then simply leave berries to soak overnight beforehand in a good glug of gin. Or, why not experiment with your own favourite fruit and alcohol combinations?
Ingredients
140g softened butter
140g brown sugar
140g self-raising flour
2 free-range eggs
Gin or vodka soaked blackberries
1/3 tsp baking powder
1 tsp vanilla essence
Nutmeg
Method
Heat the oven to 180 Celsius / Gas 4 / 355 Farenheit
Butter a 2lb loaf tin
Cream 140g softened butter and 140g brown sugar, then slowly mix in two large-free range eggs
Fold in 140g self-raising flour and 1/3 tsp baking powder
Mix in the berries, then add 1 tsp of vanilla essence and a pinch of nutmeg
Cook for approximately 50mins, checking regularly
